Another Enchilada Sauce
- 1/4 c vegetable oil
- 1/4 c flour
- 1 t garlic powder
- 2 t ground cumin
- 1/2 t dried oregano
- 1/4 t dried hot smoked paprika
- 2 T chili powder
- 2 c vegetable broth (or water)
- chipotle puree (to taste)
- Heat vegetable oil on medium. Wisk in flour and brown for a few minutes.
- Add remaining seasonings and then gradually add vegetable broth, whisking frequently to avoid lumps.
- Reduce heat to medium-low and simmer until thick.
