Apple Cranberry Oatmeal Muffins
Ingredients
- 1c all-purpose flour
- 2/3c whole wheat flour
- 1c oat flour (made by putting whole oats in a blender)
- 1 and 1/3c whole oats
- 1/3c wheat bran
- 1/3 wheat germ
- 2t baking powder
- 2t baking soda
- 1t salt
- cinnamon, nutmeg, cloves, and cardamom, to taste
- 2/3 c sugar*
- 1/4 maple syrup
- 1c almond milk
- 1c hot water
- 2 "eggs"
- 2/3c oil (or just less than, if greasing pans)
- half an apple, chopped
- 1/2c frozen cranberries, tossed win cornstarch
Optional Glaze
- 3T milk
- 2T lemon juice
- 2T icing sugar
Directions
- Preheat oven to 375 (convection) (or 400 electric) and lightly grease muffin tins.
- Combine dry ingredients in a bowl and mix well (don't skip this step!).
- Measure out all wet ingredients and then add quickly to dry ingredients.
- Stir to combine but DO NOT OVERMIX! It's okay if there are a few pockets of unmixed dry ingredients.
- Spoon into tins and brush with optional glaze. Bake for about 10-15 minutes. Muffins should be firm to the touch.
- * these muffins could be made sweater next time.
