Baked Burritos
Ingredients
- 1T oil
- 1 zucchini
- 1 large carrot
- 1-2 c mushrooms (whole)
- 1 large onion
- 4 cloves garlic
- 1 serrano pepper
- whatever veggies you have in your fridge that are expiring (cauliflower is great)
- 2t cumin
- 2t chili powder
- 1/2t each: onion, garlic powders, smoked paprika
- salt and pepper to taste
- Refried beans
- Spanish rice
- Flour tortillas (store-bought work fine)
- Salsa, guacamole, sour cream, cheese (whatever fillings you like)
Directions
- Shred/grate vegetables with a food processor/grater.
- Heat oil in a large frying pan on medium and add onions, garlic and chili pepper until onions are translucent. Add remaining ingredients and fry on medium/medium-high until liquid is evaporated. Adjust seasonings as necessary.
- Preheat oven to 375 and lightly oil a cookie sheet. Fill each tortilla with a few tablespoons of beans, veggies, rice, and finish with whatever other fillings you're using (don't use more than 1T cheese inside). Fold burrito and place on cookie sheet.
- Once the cookie sheet is full of burritos, lightly sprinkle with cheese and bake for 10-20 minutes or until browned and slightly crispy.
