Chickpea Curry
Ingredients
- 1 onion, diced
- 4 cloves garlic, minced
- 1 carrot, chopped
- 1 roasted sweet potato
- 1 tbsp olive oil
- 2 c drained, cooked chickpeas (a single can, if using canned)
- 1 can coconut milk
- 2 or 3 tbsp curry powder
- 1 tbsp turmeric
- handful of cherry tomatoes, or 1 chopped med. tomato
- 1 tsp sea salt
- black pepper and chili peppers, to taste
Directions
- Saute the onion, garlic, and carrot in the olive oil on medium-high heat, until onion is cooked.
- Add the cherry tomatoes, and cook a few minutes longer.
- Add all remaining ingredients, and cook for 15 more minutes.
