Granola
Ingredients
- 1c rice crispies
- 1/3c quinoa, soaked in water for 30-60 min and drained
- 1/3 millet, soaked in water for 30-60 min and drained
- 2c whole (slow) oats
- 2T flax meal
- 1/4c wheat germ
- 1/4c wheat bran
- 1/4c to 1/3c each, chopped: pecans, walnuts, almonds, hazelnuts, cashews, raw unsalted pistachios, soy nuts
- 1/4c each: pumpkin seeds, sesame seeds, sunflower seeds, flax seed
- 3T each: hemp seed, shredded coconut
- 1t salt
- healthy dose cinnamon
- dash nutmeg
- dash cloves
- dash cardamom
- 2T orange zest
- 3T orange juice
- 1.5T vanilla
- 1/4c oil
- 1/4c maple syrup OR 4T maple syrup + 4T honey
- 1c to 1.5c dried fruit (cranberries, blueberries, apple, dates)
Directions
- Combine all ingredients except fruit. Mix well.
- Spread evenly on cookie sheets covered with parchment paper.
- Bake at 325 (convection) for 10 minutes; stir, and bake again for another 7 minutes; stir, and bake for another 5 minutes.
- Once granola has cooled, stir in dried fruit.
