Orange Cardamom Cookies
Ingredients
- 2-1/2 c all-purpose flour
- zest of 1 medium orange
- 2 t cardamom
- 1 t salt
- 1/2 c unsalted butter
- 3/4 c sugar
- 1 large egg yolk
- 2 T cream
- 1/4 c orange juice
- 3/4 t lemon juice
- about 2c icing sugar
- 2t meringue powder
Directions
- Cream butter and sugar together. Add yolk and cream and mix until fluffy.
- Combine remaining ingredients, mix well, and then gradually add to butter mixture until well combined.
- Divide dough into 4, form into discs and refrigerate, covered, for about an hour.
- Preheat oven to 350.
- Roll out each disc to about 4mm and cut as desired. Bake for about 8 minutes or until golden.
- To make icing, combine all ingredients in a bowl and mix until smooth. Adjust icing sugar for piping consistency.
