Vietnamese Noodle Soup
AKA: Vegan Pho (sort of)
Ingredients
- Broth:
- 8 cups vegetable stock
- 3 tbsp soy sauce
- 8 garlic cloves, peeled and coarsely chopped
- 1 small onion, diced
- 1 1-inch piece of ginger
- 2 cinnamon sticks
- 2 pods star anise
- 2 bay leaves
- Soup:
- 1 lb rice noodles
- bean sprouts
- shredded cabbage
- basil, cilantro, and any other greens
- scallions
- fake meat (seitan) (optional)
- garnishes: lime wedges, chili rounds, salt and pepper
Directions
Broth:
- Char ginger in a stockpot.
- Add all remaining ingredients and boil for at least 20 minutes.
- Remove large/inedible bits.
Soup:
- Cook rice noodles in a pot as per directions. Drain and split into bowls.
- Add remaining ingredients to bowls.
- Ladle broth over noodles and vegetables into bowls.
- Season with garnishings, if desired.
