Wheat Injera
Ingredients
- 2.5 cups flour (half white, half whole wheat is good)
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 cups water
Directions
- Heat a frying pan on medium-high heat.
- Mix flour, baking powder, and salt in a bowl.
- Mix water in with dry ingredients. This makes a watery batter.
- Make each injera:
- Spread a very small amount of oil onto the pan, if required.
- Spoon enough batter onto the pan to coat it.
- Fry until the top has just set. Don't overcook, the bottom should not brown.
- Remove and roll into a cigar shape.
Eat with Shiro.
